how can i delete a child’s apple id
we no longer use the apple id i created for my child. How do i delete their apple id account and remove it from my family sharing?

… Your child can also request deletion of their Apple ID, which requires your approval.
So it can be done. Please read that article for the details and be careful not to delete your own!
