After updating to MacOS 11.1 - Unable to check for updates

I was running Catalina (latest updates all applied). Two days ago finally took the plunge and installed Big Sur 11.1

Now, when I go to Software Update, I get this message:

Unable to check for updates

Make sure you are connected to the Internet.

Mac App Store and web browsing are normal.

Steps I already tried:

  1. Clear NVRAM and SMC.
  2. Erased SSD and installed fresh with USB installer.
  3. Connecting on various wifi networks.

What's wrong and what do I have to do to get Software Update working again? My Mac was working just fine in Catalina, before Big Sur!
