After my iPhone and my iPad Pro updated to the latest iOS, the Calculator no longer switches into the Scientific mode. Why is this?
The iPad never had an Apple calculator app.
The iPhone goes to Scientific mode when in landscape.

what calculator app are you using?
I'm pretty sure that the iPad doesn't come with one..
The one for iPhone requires turning to landscape, works fine on my phone..
