I just updated my 2019 16" MacBook Pro to Big Sur v11.1 and now have lost the ability to drive my external 40" LG 4K TV with any resolution beyond 1080P.
Is this a known issue?
I tried holding the Option key while selecting the Scaled option for my display - it provided some additional resolutions but nothing beyond 1600 x 900 or 1344 x 1008.
Make sure the USB-C adapter to your monitor supports 4K without additional drivers.
SwitchResX and DisplayConfigX may offer additional resolution options if the hardware supports it, but the software does not.

Thanks - updating to an HDMI 2.0 cable fixed the problem.
