How can I remove the Mail app from my watch because it’s taking up to much space and I don’t use it on my watch?

You would need to delete the Mail app from your iPhone.

Delete built-in Apple apps on your iOS 12, iOS 13, or iPadOS device or Apple Watch - Apple Support
