Do I need to transfer the SIM card from old phone to new phone in order to activate the new phone?

You may not need to transfer your old SIM to new iPhone in fact you will need your old SIM for Two Factor sign in authentications and iMessage/FaceTime activation. So make sure that you change your number from Apple ID>Password and Security>Add new number
