Read this support document on Finder. Finder is the software in the macOS which allows you to navigate around your Mac. It goes right back to the earliest Macs in the 1980s.

WIth Big Sur, Finder is used to synchronise an iPhone and other iOS devices. This task was performed by iTunes until it was retired with Catalina in 2019. After it is set up to do this you can also sync wirelessly.

The Photos app will handle the syncing of photos between your iPhone and your Mac. Read this. If you wish to delete your photos from your iPhone be sure to tick the box that says Delete Items After Import - but be patient. It's a process that might take a little time if you have told the application to delete lots of photos. However, the easiest and best way to co-ordinate your photos is to use iCloud Photos. I use this method. It's swift, reliable and simple.
