Must I carry my phone to make calls on the watch with Credo as cell provider?

If it is an Watch GPS only then yes with your paired iPhone nearby.

If it is an Watch GPS + Cellular, and your iPhone carrier activated Watch number sharing

then you can make/receive calls without an iPhone nearby.
