Ok to charge continuously or disconnect at 100%?
Yes, it is ok. Eventually it is good for you to discharge and charge it within a few days.

The 'battery health' panel shows that your macbook model (in later 10.15/11.1 macOS)
at times can be running automatically off the battery, then it reverts to charging again.
Older versions macOS do allow you options and the macOS can be adjusted; the default
is notably better in later macOS since when on power adapter, you can see it there.
My older Mac portables (one in Leopard 10.5.8, & later Mojave 10.14.6) have other options.
