I am working on a project that requires JPEG format, my pictures taken on my iPhone 10 are foreign and rejected, I have my phone plugged in with a converter, so how can I use my own photos?

You can also download the photos with Image Capture to a folder on your Mac, if you do not want them in the Photos.app. Then convert them with preview.

Assuming your photos are in the phots app on a Mac - what you need is to select images, then file>export - you can then select jpg as the export format and the files will be transferred to a folder.
