I just switched from an Android phone. How does a QC3.0 charger work with iPhone 12?

It will work to charge your iPhone 12 but won't fast charge it.

To fast charge your iPhone you will need a USB-C adapter, whether Apple or third-party, that supports the new USB-PD protocol.
