Make sure to unpair first in the future.
You'll need to erase from the Watch instead this time. Put on the charger snd go to Settings > General > Reset > Erase all content and Settings. Then pair to your new iPhone.
What happens when you try? Any specific errors? Did you unpair it from the prior phone?
Update the software on the watch.
Watch OS 7.3 is current.
I no longer have my old iPhone. I did not unpair it earlier
I am unable to update the software of my watch too
