Will I be able to keep my CBS/Showtime subscription for Apple TV if I sign up for Apple One family subscription?

Yes. Apple One is for bundling Apple subscriptions, it does not interfere with other subscriptions that are billed through Apple ID.

sure, same as one can have a netflix and a hbo subscription getting more does not remove the others
