What should I buy?

MacBook Pro M1 with 16GB Ram and 256GB SSD


OR


MacBook Pro M1 with 8GB Ram and 512GB SSD

I edit videos on final cut pro and I need speed (Ram) but I saw a video on YouTube that shows that the speed on the 8GB and the 16GB is almost the same...

Because of my video I need good storage... But I can always buy a hard drive that cost less.

What are you saying?

If that is your limitation, I would say get the 512GB Storage in comparision.

Many operations require sharing data between the CPU and GPU some memory transfer can be the bottleneck. In contrast, the Apple M1 chip has unified memory, allowing the "GPU and CPU to share memory without penalty.”
