Can I travel with my Apple TV abroad to use just to mirror my devices to any big screen TV?

Yes, AirPlay receiving will work just fine, same as at home.
Note that AirPlay sending may have limitations/restrictions, depending of the source of the content. Some streaming services may not be available to IP addresses abroad. Some streaming services do not allow AirPlay. Some streaming services are selective to what model Apple TV they can send content.
