“Restore Process Has Failed” while trying to clone

I was trying to clone my HD to my new SSD via Disk Utility using Mojave OS on a Macbook Pro mid 2012. I had tried choosing both APFS and the default Mac OS Extended (Journaled). Both times I get the same error that the restore process has failed. What am I doing wrong?

Disk Utility is terrible for cloning a macOS boot drive. You need to use the third party app Carbon Copy Cloner (CCC) which can be used to clone the same drive you are booted from (as long as you are not doing anything else but cloning it). CCC is even able to restore the hidden recovery partition as well. Our organization has used CCC for years to clone macOS boot drives.
