Unable to delete individual messages
iPhone 11 and iPad both running iOS 14.4, when choosing a single message and choosing MORE, the trash can is grayed out and DELETE ALL is the default. How do I turn off DELETE ALL. Thank you.

It sounds as though you're wanting to delete only certain messages from within a message thread. You're on the right track for doing so by pressing and holding on a message, and tapping More. On the next screen that appears you will want to make sure you see a blue bubble to the left of the message you're wanting to delete. If the message isn't selected by showing the blue bubble the trash can towards the bottom left won't become available as a tappable option.
Use Messages on your iPhone, iPad, or iPod touch

Open the Messages App
See the Edit button at the top left
Tap it
Tap Select Messages
A little circle appears next to each message
Tap the circle of any message you want to delete
Tap Delete in bottom right hand corner
Conversely - On the message list
Slide from the right hand side of the message and tap the Red Trash Can
