Camera Night setting

How can I deactivate the night setting, so it is always deactivated.

That setting cannot be permanently de-activated. It will need to be turned OFF as needed. In my opinion, it is one of the most significant feature of the iPhone 11/12 camera for low light photography. That feature should not come ON during adequate available ambient light. It turns on during low light conditions to inform the photographer about how long to hold down the shutter trigger button.

If you still do not like the feature then you can suggest your recommendation to Apple then please leave feedback here ➔ Product Feedback - Apple
