Can my family assess my info from my phone on apple tv? Its very easy to switch between accounts.

Switching user accounts allows each users to have their own library, Up Next queue, and Watch Now recommendations, and a few other personalizations (e.g. Apple Music, App Store apps, Apple Arcade).
It does not reveal access on your phone. It does not reveal your messages. It does not reveal your emails. It does not reveal your iCloud photos (unless you additionally also sign in for iCloud on Apple TV with iCloud Photos sharing activated). It does not allow purchases on your account (unless you de-activated sign-in requirements for that).
It does reveal your purchased movies and TV shows, music, and any apps installed on your account, Up Next queue, and Watch Now recommendations.
