You can't change that in the Preview window of the email. It's there for those who have more than one email provider that is managed by Mail so they can see which email address was used to send the email to them.
If you don't use it just learn to ignore it. Tell Apple what features you'd like changed via Feedback - macOS - Apple.

these are in the Preview window and they are "To" me---is it just an indication that the person who sent the email is in my Contacts?--can I remove that "feature" that Apple has decided I'd like? (this is a new iMac27 that I just bot and came with Big Sur on it)
It refers to the person or organization one is sending the email to. It will usually pickup names from the Contacts App.
