Does turning off Bluetooth on your iPhone unpair your phone from your car ?
No. Turning OFF Bluetooth does exactly that. That turns OFF Bluetooth and disconnects the active bluetooth connections. This action does NOT unpair or remove any previously set up bluetooth connections (devices).

It doesn't "unpair" it, but it will disconnect it until you turn it back on.
