Ho do I restore my lost documents and files on the iCloud

I have been using and paying for iCloud storage for over a year. for Pictures, PDF, Office Docs, but all of a sudden thousands Docs and Folders are not longer in the iClod storage. Since this pandemic and working remotely we figure the need to have a iCloud storage to share folders, we were happy with but now is this huge problem; I wish I could stayed away from iCloud storage for important documents, from a service that will create me some problems. We restore all and any deleted files within iCloud storage, this happen just couple weeks ago. We do delete occasionally some files but this time over 5000 thousand files and folders were deleted out of nowhere but more thousands nowhere to be found. I stopped using Cloud storage for now and I will probably never use them again except to store and share (temporarily share) those not important docs and pictures. I already restored all if the files found within iCloud drive but where are all the rest of the other files are? Any Idea?
