I am think of upgrading my current MacBook Pro which has two external screens attached, but I heard the new M1 chip can only attached 1 x screen, is that correct?

You can try but I doubt they will tell you. Apple is pretty tight lipped about future products. They are so for good reason. If they released information about future products it could affect the sales of current products.
