How can I change USER account name from "Jane Doe" to "John Doe?"

If you are logged in as her (admin) You can create a new Account and give yourself admin privileges.

This is the least risky way— changing a account name/home folder is wrought with possible issue and things do go wrong.
There is warning box—for a very good reason here: Change the name of your macOS user account and home ...
Log out of her account log into your account— after some testing over a couple weeks. Delete the original admin account/ or not— it will free up storage space.
This has some important info before you close out one account— you want to get on your own Apple ID for many reasons.
