The Eco-tank L220 does not automatically update its drivers when you install a new operating system or its update. The drivers for this device are here for macOS 11. I would focus on the Nov 2020 driver, and the Jan 2021 ICA (Image Capture) driver. The Epson Scan 2 software dates back to Oct 2020 — a month before Big Sur was released, and it may have issues due to that fact.
Once you have downloaded and installed the drivers, ensure that the printer is powered on, and on the System Preferences > Printers & Scanners panel, right-click on your Printers entry for this device, and select Reset printing system… This allows you to re-add the printer with the newly selected drivers that you just installed. There may be scan configuration on the Printers & Scanners panel afterward, or Apple's ImageCapture may just recognize the device scanner.
