So I just purchased the iPhone 12 Pro Max and switched carriers as well to a plan with no hotspot cause we don’t need it. I’ve now noticed when I go to wifi there is a section that says “Personal Hotspot - iPhone and GPRS” What is this?

You may need to check with your carrier. It’s a “General Packet Radio Service” so you may have to contact them to disable it or do a web search to see what steps come up. It may not do anything at all since you don’t have a hotspot feature with your plan
