What about if I keep installing l latest version of iOS and iPadOS and some apps are not compatible yet? (For example OnSong and MOTU Digital Performer)
You check the app compatibility from the developer's site before you upgrade the version of iOS/iPadOS. Otherwise, you wait until the developer updates the applications, or decides to abandon them. There is no reverting to the previous version of iOS/iPadOS.
