I purchased the IPhone 12 Pro. Ordered online and express pick-up @ Apple store. My question is can I return/exchange that IPhone 12 Pro for an IPhone 12 Pro Max and pay the difference in cost? Or do I have to wait for a full refund to my card in a week and purchase and pick up weeks later all over again?

Your latter assumption is correct. You will have to return the iPhone 12 Pro and make a fresh purchase of the iPhone 12 Pro Max. Of Course, you can initiate the refund however you do not have to wait for the refund to hit your card. You can purchase the iPhone 12 Pro Max at any time. You can even purchase the iPhone 12 Pro Max today and return your iPhone 12 Pro tomorrow or within the return/refund period which is normally within 14 days of the initial date of purchase.

Actually I found a screen imperfection when putting on a screen protector, a small dimple in the glass and returned the 12 pro within the 14 days and the apple genius put the refund on an Apple Card and let me exchange for a 12 pro max and pay the difference with cash!!! First over the phone they did try to send me for a screen replacement @ Best Buy but for a phone that was less than a week old I said no way, not opening up a brand new phone and I pushed for an exchange and got it. At the apple store they asked about a screen replacement also and I said NO! They did mention that the CDC wasn’t allowing them to exchange phones and had to check if they were able to that day and they are allowed now.
