Recently I installed PocketBook app.
Now if I open a text file in the standard Files app I get PocketBook opening the selected file.
How do I switch the default app for text files to the standard QuickLook app?

Sorry, I've been looking at it and I haven't found a way to change this behavior. It's a breeze on macOS or Windows but iOS doesn't give a way to do this.
In any case, try to uninstall the app with which you want to open your files and reinstall it. That might be the way to reset things if we are lucky :)
You are indeed correct: QuickLook is part of iOS. I'm sorry, I was focusing on PocketBook. As soon you reinstall it, it takes over.
There are no solutions at this time.
Now, this is for you decide: QuickLook - which may evolve in the future to provide the functionality you need - or PocketBook - which provides you the functionality you need right now.

I just tried to uninstall the PocketBook app and now the standard QuickLook opens text files.
After re-installation, the PocketBook app took control over opening text files again...
I meant it the other way around: uninstall QuickLook (make sure you don't lose nay data,; a backup might be a good idea) and reinstall it. The hope is that it will take over PocketBook as the default app.
This is partly my case.
The current default app in the middle of the (neither the first nor the last) in the Share list.
Besides, the suggested thread discusses iOS 11.
Any other ideas?
It seems like QuickLook is a part of iOS or the standard Files app.
Thus, I see no way to uninstall it...
