I noticed that my iPhone was syncing to the Mac and when I ejected the phone the playlists were restored. I assume that was the problem

The article you've linked from - If your songs are grayed out - Apple Support - should have the guidance you need. Perhaps you can post a screenshot to add clarity about what exactly it is that you're seeing. Is this is happening in your library, or when viewing a connected device?
