I have, from I bought the latest version of Apple TV, been able to choose my airplay speakers from the Apple TV Audio settings. But lately that feature is not available. I can still choose Bluetooth for my B&O speaker but the Appleplay feature is gone. Is this a new ‘feature’ or a known bug? I am on latest versions on both devices, same network and the speakers can be reached from other devices like my Iphone 12 and my Mac, using Appleplay

So the first picture shows airplay settings, but the second is showing the default audio output (not airplay). Just like on the iPhone you would be using control centre to access airplay, on Apple TV that is done by long pressing on the home button.

Still working on my system and have not seen other reports of this. Just to clarify, you are on TVOS 14.4 and I assume you have tried a reboot.
If it persists then let Apple know

No problem. Control centre was introduced to Apple TV back in 2019 with TVOS 13 so it's been quite awhile now. Glad, it's working for you now.
