Mid 2011 iMac won't upgrade to high sierra

The hard drive on this iMAC died and I replaced it. I was able to load OSX 10.8 on it since I already had it loaded on a USB and thought I could just hit the update button and get it up to high sierra. I keep getting an unknown error when trying to do the updates so I tried doing the updates one by one. I was able to do a lot of them except itunes.

I made a bootable high sierra USB but it won't show up when i hit option O. It also doesn't show up as an option for a start up disk.

what gives?

iMac 27″, macOS 10.15

And it won't upgrade using the standalone installer?

Try reinstalling this in Safe Mode, but not using Firefox...

Safe Boot, (holding Shift key down at startup).

Seems to fix about 90% of the problems.
