You need to remove the activation lock at the very least.
If you want to send it to them without actually deleting the data, you can do that, but don't expect it to be there when you get the phone back...
Apple will NOT guarantee that any data on the device will be intact following repair.
Make SURE you have a backup of your data before you send it for repair.
If you did not make a backup prior to breaking it, and are unable to do so now, you may as well consider your data gone.

Does iTunes back up all the phone
It does not backup the apps but you can download again.
Does it save the data for the apps
Yes.
