For the last couple of days when I open up Messages it opens up to the last conversation I had. I completely close the app and it still happens.

Close the conversation. Then close the app.

I seriously doubt it. My iPhone does not now (and never has) behave(d) that way. I always close all conversations before closing the Messages app.
