How do reinstall an app that was erased from my 3 generation apple TV

Unfortunately, that is not possible. Removed apps are gone because the content provider stopped supporting this model Apple TV.
Or possibly you unintentionally hid the app, not really erased, in which case you can bring in back through Settings﹥Main Menu﹥.
