I bought new Apple phone and it runs iOS 14.3. I use Dexcom 6 app to monitor my blood glucose that is only on version 14.1. can I remove my version 14.3 and install version 14.1?

choosing update? I use a Dexcom G6 CGM for blood sugar testing and I am wondering if you can choose the update you want or is it automatically updated to the latest iOS version? Dexcom is only compatible up to iOS14. This is my first Apple product which is iPhone 11 Pro Max. Does anyone else use a Dexcom G6? Thanks!!
