Sim cards ... upgrading iPhone 7 to 12 Pro

what is the best procedure for Sim cards upgrading iPhone 7 to iPhone 12 Pro). I am not switching carriers.. i have Verizon and want to retain my old phone number. Should i swap out the Sim from my iPhone 7 prior to setting up? or...Should i utilize my new Sim card, and have Verizon transfer my number? Or, is there a better way? Thanks for the help.
