With Big Sur, I cannot delete some movies from my hard drive. The only option is "hide." Does that mean the movie is removed from my hard drive?

The process is similar in Big Sur. The article is agnostic and describes how you can use the iTunes, Music, or TV apps for managing hidden content. To free up local storage of a downloaded movie without hiding from your purchase history right-click and use Remove Download.

This doesn't help with Big Sur because iTunes doesn't exist in 11.2.3
