I don't want them to find out that I sent them the gift (surprise) until I message them myself. If I have the shipping address as their house, and the billing address as my address, will they see my Billing Address or Name? Would it make a difference if I paid with Apple Pay or my Debit Card?
Your billing address should not show on the shipping label; it is usually the shipper (Apple). However, since you are shipping a gift, you best doublecheck with Apple since they may include your name - but that is just a guess. Remember, we are just other users and not privy to Apple's shipping/labeling methods.
