If we understand correctly, you are trying to delete Gmail in the Mail app on your iOS device. 

First, you will want to check the settings of your Gmail account and make sure it’s set to delete. Follow these steps to verify the settings.

1 - Go to Settings > Mail

2 - Tap Accounts > select the email account

3 - Tap Account (email address) > Advanced

4 - You can verify settings here. Look at “MOVE DISCARDED MESSAGES INTO:” and see if it is set to Deleted Mailbox or Archive Mailbox.

If you still are seeing the Gmail messages after verifying it is set to delete, then you will want to check your mail settings with Gmail.
