Do I need to pull the sim card from my old iPhone 11 trade in ....to put in my iPhone 12 Pro Max?

You can. Or you can opt to install the new SIM card that comes with it (unless you’re buying a sim free iPhone). I would suggest using the new SIM card but it’s not necessarily required.
