Hi my iphone 11 is stuck in grayscale since yesterday and i tried doing everyting like going into settings-accessibility and turning off the colour filter and going into settings-accessibility-zoom and turning off the zoom filter. Nothing seems to work and i don't know what else to do.

It looks like you have Increase Contrast on. Your screenshot isn't actually in grayscale, since there are colors in the pencils, but rather the switch is a dark shade of gray because of the increase contrast setting. Turning that off should enable the default appearance again.
If your device is actually not showing colors on the pencils, then there might be something else going on.
