I recently purchased an Apple Watch and was able to complete the set up but I was never able to connect with the walk-in talkie, then a few weeks later the app on my SE (2020) wouldn’t open. The screen would flash and just got back to the main screen. I tried to delete the app but it says I had to unpair my watch so I did that and I still cannot delete the app and re add it.

I'm not sure, but what I would try is with the watch unpaired, restart your iPhone.

Then try to delete the watch app (if it didn't delete itself).
If that works, then pair your watch.

If it doesn't work, then the more drastic step would be to restore your iPhone from a back (or even more drastically, factory reset it):
