after installing CyberGhost VPN on my IPhone 8 I have encountered problems accessing certain apps, including Google. Is there anyway of getting around this with the settings on my iphone or the VPN settings?.Simple language please as I’m in my 70’s and struggle with acronyms I haven’t across before.

You may also have problems with streaming apps as well. My best answer to your question is to NOT use VPN services at all and save your money if you are paying for it. No acronyms, No processes, just remove the VPN service.
These VPN apps give you no privacy in reality. It masks your IP however the provider's servers always have your record. Location based subscription apps have trouble identifying your location and therefore cease to work. You cannot update your iPhone with the VPN in the ON position.
If you would like to keep the VPN services/app then you can always turn it OFF and ON as you need it. If you will be using Google then turn it OFF and after that you can turn it back ON. You can do so by opening Settings ➔ General ➔ VPN : Set it to OFF or ON.
