On IPhones, there is an apple symbol on the back of the device. It is actually a button that you can set to do a few different things with a couple taps. Does anyone know if the 8th gen iPads symbol on the back does the same thing? Mine looks the exact same as on my iPhone but I’m having trouble finding the setting for it. Please help!

That is an option on specific models of iPhones only, no iPads.

The back-tap is a recent (and exclusive) feature of iOS14. The feature uses the built-in accelerometer - and whilst the Apple logo appears on the back of the iPhone, it has absolutely no relevance to use of the back-tap feature.
iPadOS does not replicate this trigger feature.
