clicking edit on a photo imported from iPhone 11 immediately crashes Big Sur

MacBook Pro 13″, macOS 11.2

Try this is Safe mode.

Start up your Mac in safe mode - Apple Support

Try it again. Are these RAW or HEIF or JPEG?

It seems to not crash in safe mode. The image files are HEIF,

Try it again in regular mode, sometimes safe mode clears some caches which may cause issues.
