How can I delete large blocks of email prior to a certain date ? Ex: All email before 01/1/21

Your question suggests you cannot see them ? If so make sure the account is set to “no limit” in days to sync in Settings, Mail, Accounts.
If you can see them but the bulk deletion is the challenge try signing into your email account in a browser on a computer. It just makes it a bit easier.
As a general guidance, in future consider filing emails in year based folders, eg “Sales2020” to be zapped in the future as a whole folder.
