Signing out of my email
How do I sign out of my email on my iPad Pro

I presume you seek to explicitly sign-out from your email account - and not sign-out of your AppleID/iCloud account that is identified by your email address?
If so, you sign-out of email by deleting the email account from the iPad:
Settings > Mail > Accounts > [Your email account] > Delete Account
If instead you wish to sign-out of your AppleID/iCloud account, you can do so here:
Settings > [Your Name / AppleID] > Sign Out
