I just purchased Apple Music family sharing. I’m currently paying for two separate Apple Music plans, one on my phone and one on my son’s. I’m wondering if I will continue to be charged for the Apple Music on my son’s phone or if that will automatically stop now that he is part of my family sharing group.

If you follow all the steps in:
Get an Apple Music family subscription - Apple Support
then according to the footnote in the "First, set up Family Sharing" section "If someone in the family group already has an individual or student subscription to Apple Music, renewal of that subscription is automatically canceled when they join the family group." Just be sure to Set up Family Sharing on your device (in addition to purchasing an Apple Music Family Plan). Then invite family members to join your family group and make sure they accept your invitation.
