Margins and font size in the notes app
How do I change the margins in the notes app as well as change the font size?

You don't.
This is not possible.
The default supplied iOS Notes apps is a barebones note taking/writing app with a very limited feature set.
Either try learning to use the Apple Pages app, or find more feature rich, third party, pay note taking apps that are more capable than the Apple Notes app.
There are LOTS of things that the basic iOS Notes app can’t do.
